It doesn't contradict itself. Don't take the statement so literally everyone. The instructor is telling them not to fight the other man's fight. It is just a phrase that will stay in their minds so that they think about this and internalize the information. As an instructor you do this all the time to help students with combat theory, then you prove the theory to them in sparring.
I'm sure they don't advocate ONLY kicks vs a guy throwing punches and the converse. They're simply saying focus on the unfamiliar weapon in their combos to victimize the opponent. (it's obvious there isn't any grappling in this art as there is no mention of using that vs a striker)
NOTE: as for "figuring out what the opponent is" you can tell from the person's fighting stance what they are most likely to throw. The unpredictable element is if the person is going to change levels and go for a takedown off of their strikes which can happen at any time.
NOTE 2: About the big scary unpredictable "street fighter". The only difference I have experienced (read that as I have a lot of street fights under my belt) is that the typical untrained man (or has little training) is VERY predictable as his stance is usually overexaggerated and he almost always telegraphs his next move (at the very least with his body and most of the time also with his eyes), whether it is a strike or that he wants to shoot in to grapple.
