What exactly is the difference between western ice cream and Indian Kulfi?
Anyone actually make Kulfi / Ice Cream?
Please don't tell me that Kulfi is Indian Ice Cream. That doesn't answer the question and is not accurate.
Also, please don't cut and paste from Wikipedia - I've read the very short article in there. I would like to hear from people with personal knowledge.
It uses condensed milk like the Carnation brand, thickened with rice flour, scented with saffron and rose water, is not a creamy as North American ice creams more like Italian Gelato.
When they serve it, it is generally served like a sundae, in a dish with rose syrup, vermicelli soaked in sugar syrup and a dusting of nuts, cashews, pistachios or almonds. It is realtively easy to make and can be done in one day, I make it when I have a gourmet Indian dinner for friends, I was chef in Canada for 20 yrs and have had alot of experience with Asian and Indian foods and cooking.
